Monday: Mexican Bowl
Prep/Cook time: 30 mins on the night - there is some soaking of nuts required too!

Tips and tricks: I have left out the cashew sour cream, if you want to try it you will need to add the ingredients to your shopping list.  We are going to use greek yoghurt as an alternative.

Wednesday: Zesty Butter Lemon Snapper

Thursday: Thai Style Beef Salad

Friday: Gluten Free Pesto Pizza
