Tuesday: Spinach Beetroot and Chickpea Salad w Flat Iron Steak

Tips and tricks: You can add a range of ingredients to this salad especially if you need to use up any veggies.

Wednesday: One Pot Vegetable and Meatball Soup w Soba Noodles
Prep/Cook time: 40 Mins

Thursday: Beef Broccolini Fried Rice
Prep/Cook time: 30 mins
Serves:  2
Tips and Tricks: Double or triple the recipe to cater for more people and you can swap the rice for any of your fav rice substitutes. 

Friday: Tomato Coconut Soup w Fish Dumplings
Prep/Cook time: 30 mins
Serves: 3-4
Lunch Leftovers: As is 
Tips and Tricks: Lou does not recommend frozen fish for this recipe.

Saturday: Cracking Chicken Burrito

Prep/Cook time: 2.5 hours - Prep the pork the night before.
Serves: 6- 8

Tips and tricks: Don't feel like you have to do all parts of this dish - the pork on its own its perfection!
