Monday: Roast Beetroot, Goats Cheese and Walnut Salad
Prep/Cook time: 1 hour

Tips and tricks: Roast your beets the day before if you can to save yourself some time on the night. If you need to bulk this meal up you could add a serve of meat to it too!

Tuesday: Israeli Chopped Chicken Salad

Serves: 4

Wednesday: Vegetarian Pine Mushroom and Bean Salad
Prep/Cook time: 25 mins
Serves: 4

Tips and Tricks: If you have vegetables that you need to use up, you could add them to the mushrooms. It will be fine to use any mushrooms that you can get your hands on.

Thursday: Herbed Chicken Thighs on Zucchini Noodles

Lunch Leftovers: As is or throw over a salad.

Friday: Chicken Saagwala
Prep/Cook time: 45mins
Serves: 4
Lunch Leftovers: As is
Tips and Tricks: You don't have to serve this dish with with rice, it is delicious on its own.

Saturday: Baked Fish w Olives and Tomato Sauce
Prep/Cook time: 1 hour
Serves:4

Sunday: Butterflied Roast Chicken w Lemon
Prep/Cook time: 1 hour
Serves: 4

Delicious Easter Treats - Refined Sugar Free

I have found some delicious Easter treats for your friends and family this Easter weekend.  Most of them are refined sugar free which I think is pretty cool.  I have made some little notes to help you along the way too.xx

Sugar Free Easter Eggs

Sugar Free Hot Cross Buns

Peanut Butter Easter Eggs
NB: I think it would be safe to substitute the confectioners sugar/icing sugar with coconut sugar.  Go easy on the amount it is purely added for taste and you may not actually need much if any at all.

Healthy Home Made Cream Eggs
NB:For the chocolate covering you could use Whittakers Ghana 72% Chocolate melted with a little coconut Oil.

Coconut Butter Easter Bunnies

Sugar-Free Marshmallows
NB: It maybe a little tricky but I think that you could melt Whittakers Ghana 72% Chocolate into an egg shape mould, pop the marshmallow in and then cover again in chocolate!

Serves: 4
Lunch Leftovers: As is
Tips and Tricks: You can make the chips well in advance and freeze them if you want to make things a little easier.

Saturday: Spiced Chicken Skewers w Coconut Chutney
Prep/Cook time: 45 mins, 2 hours marinading time.
Serves:4 - 5

Prep/Cook time: 6 hours marinading time and 2-3 hours cooking and prep time.

Tips and Tricks: This is a little complicated this recipe but it is meant to be well worth it!
Sunday: Lime and Sweet Chilli Fish Parcels
Prep/Cook time: 30mins
Serves: 4
