One of my lovely followers recently introduced me to the most amazing salads on our recent camping trip.  Super excited to be sharing the Raw Broccoli Salad with you on next weeks eating plan - it is delicicous! We have an interesting addition to the breakfast menu too, chunky chocolate buckwheat granola. Bon Appetit.xx

Monday: Raw Broccoli Salad
Prep/Cook time: 15 mins Prep 2 hours chill time in the fridge

Tips and tricks: You could add so many different additions to this recipe such as chorizo or pan seared fish.


Tuesday: Thai Shredded Chicken & Strawberry Salad
Prep/Cook time: 1 hour
Serves:  4
Tips and tricks: If you can not get your hands on strawberries, you can use another kind of fruit.

Wednesday: Herved Green Polpette w Mint ad Tomato Sauce
Prep/Cook time: 60 mins
Serves: 4
Lunch Leftovers: As is

Thursday: Indian Spiced Potatoes w Chicken Thighs
Prep/Cook time: 1.5 hours
Serves: 6
Lunch Leftovers: As is
Tips and Tricks: We do not eat a lot of potatoes, so we will be using kumara in this recipe.

Friday: Zoodles with Avo Pesto Cream and Haloumi
Prep/Cook time: 30mins
Serves: 4

Saturday: Lemon Grass Chicken
Prep/Cook time: 45mins
Serves: 4

Sunday: Roast Leg of Lamb w Aubergines
