Tuesday: Lamb Couscous Salad
Prep/Cook time: 1 hour 15 mins
Serves: 4

Wednesday: Ceviche w Crispy Paprika Potatoes
Prep/Cook time: 60 mins - Mainly for the marinading.
Serves: 4

Thursday: Beef Stir Fry Rice Noodle Salad
Prep/Cook time: 30 mins
Serves: 4
Lunch Leftovers: As is 
Tips and Tricks: If you are not a fan of rice noddles swap them for whatever works best for you.  I was recently introduced to Black Bean Noodles recently and they were amazing!

Friday: Asian Style Chilli Chicken Nachos
Prep/Cook time: 30mins
Serves: 4
Lunch Leftovers: As is
Tips and Tricks: Choose your chips wisely there are amazing gluten free chips about - I love the Culley's ones!

Saturday: Achiote Recado Pork
Prep/Cook time: 3 - 4 hours to marinade, 2.5 hours cooking time
Serves: 6
Lunch Leftovers: As is

Sunday:  Hawaiian Glazed Chicken
Prep/Cook time: 90 mins
Serves: 4
Lunch Leftovers: As is 
Tips and tricks: Serve with your favourite slaw.
