Come on sunshine you can do it!  Gin has welcomed it's lovely self back to the kitchen bench, strawberries are planted and the tomato seed's are on their way too.  Oh and it would be rude to not include a recipe that features asparagus.  Bon Appetit.xx

Wednesday: Greek Meatballs with Eggplant and Mashed Pototoes
Prep/Cook time: 45mins
Serves: 4

Tips and Tricks: Substitute the mash for any alternative that suits you or even get rid of it and serve the meatballs with brocollini.

Thursday: Lemon Grilled Haloumi w Warm Freekeh Salad

Tips and Tricks: If you cant get your hands on Freekah you can substitute it with quinoa.

Friday: Blue Cheese and Onion Pizza
Prep/Cook time: 45mins
Serves: 4

Tips and Tricks: Select the pizza base that works best for you or you can make your own too.

Saturday: Lamb Salad
Prep/Cook time: 60 mins
Serves: 4

Sunday: Crispy Pork Belly
Prep/Cook time: 5 hours slow roasting.
Serves: 4 - 6
Lunch Leftovers: As is 
Tips and tricks: Serve with simple greens and a crunchy slaw.
