Wednesday: Soft Fish Tacos w Mango Salad

Tips and Tricks: If you cant get your hands on fresh mango, you can always give tinned ago.

Thursday: Salmon, Prawn Potato Croquettes
Prep/Cook time: 45mins
Serves: 4
Lunch Leftovers: As is
Tips and Tricks: You can swap the Potato for Kumara, Bread Crumbs for Almond Meal and Salmon for Gurnard.

Friday: Healthy KFC
Prep/Cook time: 60 mins
Serves: 4
Lunch Leftovers: As is 
Tips and Tricks: This recipe is so versatile, you can use any cut of chicken and simply double the recipe to cater for more.

Saturday: Grilled Flank Steak w Quick Green Sauce
Prep/Cook time: 30 mins 
Serves: 4
Lunch Leftovers: In a wrap or a salad!

Sunday: Roast Pork Shoulder
Prep/Cook time: Slow roasting from early in the morning! 45mins for the veggies.

Tips and tricks: This recipe serves a lot of people, I'll be using the same cut of pork but will be taking it easy with the sides.
