Monday: Sweet Potato Gnocchi

Tips and tricks: I never have tapioca flour so I use rice flour instead.

Tuesday: Harvest Salad
Prep/Cook time: 60 mins
Serves: 6
Tips and tricks: Great recipe to use up any old veggies!

Wednesday: Sweet and Sour Fish
Prep/Cook time: 30mins
Serves: 4

Tips and Tricks: You don't have to serve with rice you could serve this with baby cos lettuce, quinoa or a beautiful bunch of stir fried greens. Swap the white sugar for coconut sugar too!

Thursday: Warm Greek Lamb Salad
Prep/Cook time: 30 mins
Serves: 4

Friday: Chorizo, Rosemary and Pearl Barley Risotto
Prep/Cook time: 45mins
Serves: 4
Lunch Leftovers: As is
Tips and Tricks: You can mix up the meat component to this.  Chicken or bacon would be delicious.

Saturday: Grilled Pineapple Teriyaki Chicken Salad
Prep/Cook time: 60 mins

Tips and Tricks: There is a lot of sugar in this dressing for this salad - substitute it with either coconut sugar or honey and I would go for maybe 1/2 a cup. You don't have to include the wonton pieces if you don't want to, just leave them out. 

Sunday: BBQ Lamb w Tomatoes and Courgettes
Prep/Cook time: 2 hours marinading time and 40 mins cook/prep
Serves: 6
Lunch Leftovers: Cold the next day = Deliciousness.
