Monday: Roast Beetroot, Goats Cheese and Walnut Salad
Prep/Cook time: 1 hour

Tips and tricks: Roast your beets the day before if you can to save yourself some time on the night. If you need to bulk this meal up you could add a serve of meat to it too!

Tuesday: Israeli Chopped Chicken Salad

Serves: 4

Wednesday: Vegetarian Pine Mushroom and Bean Salad
Prep/Cook time: 25 mins
Serves: 4

Tips and Tricks: If you have vegetables that you need to use up, you could add them to the mushrooms. It will be fine to use any mushrooms that you can get your hands on.

Thursday: Herbed Chicken Thighs on Zucchini Noodles

Lunch Leftovers: As is or throw over a salad.

Friday: Chicken Saagwala
Prep/Cook time: 45mins
Serves: 4
Lunch Leftovers: As is
Tips and Tricks: You don't have to serve this dish with with rice, it is delicious on its own.

Saturday: Baked Fish w Olives and Tomato Sauce
Prep/Cook time: 1 hour
Serves:4
Lunch Leftovers: As is 
Sunday: Butterflied Roast Chicken w Lemon
Prep/Cook time: 1 hour
Serves: 4
Lunch Leftovers: As is or in a wrap or salad.
