Monday: Kale, Pea and Ricotta Fritters
Prep/Cook time: 45 mins

Tuesday: Beef Bavette w Tomato Salad
Prep/Cook time: 45mins
Serves: 4-6
Tips and tricks: You could add a very basic leafy salad like rocket and parmesan with this dish.

Wednesday: Roast Beetroot, Haloumi, Pistachio and Pearl Barley Salad
Prep/Cook time: 45 mins on the night, 90 mins to roast the beets prior.

Tips and Tricks:  You could swap the Pearl Barley for whatever works best for you!

Thursday: Spicy Mince and Lettuce Cups
Prep/Cook time: 30mins
Serves: 4
Lunch Leftovers: As is  
Tips and Tricks: You can use pork, chicken or turkey mince for this recipe.

Friday: Nourishing Chicken Nuggets
Prep/Cook time: 30 mins
Serves: 4
Lunch Leftovers: As is.
Tips and Tricks: You could serve this dish with kumara and beetroot chips to complete the rainbow.

Saturday: Pork and Potato Skillet
Prep/Cook time: 45 - 60mins
Serves: 2

Tips and Tricks: We will be adding a leafy green salad with this dish and you may need to adapt the recipe based on how many people you are catering for.

Sunday: One Tray Bake Roast Chicken
Prep/Cook time: 60mins
Serves: 6
Lunch Leftovers: Serve cold for lunch the next day - YUM!
