Monday: Saffron Roasted Cauliflower with Olive Salsa
Prep/Cook time: 60mins

Tips and tricks:You could make the Olive Salsa the night before to make things a little easier on you.

Tuesday: Warm Balsamic and Lamb Salad

Wednesday: Soft Fish Tacos with Mango Salad
Prep/Cook time: 45mins
Serves: 4-5
Lunch Leftovers: As is 

Thursday: Chicken Quinoa Superbowl with Chimichurri Dressing
Prep/Cook time: 30-45mins
Serves: 4
Lunch Leftovers: As is 

Friday: Lemon Spiced Chicken w Corn and a Pumpkin Hash
Prep/Cook time: 45mins
Serves: 4-5
Lunch Leftovers: As is 

Saturday: Pulled Leg of Lamb with Savoy Cabbage, Capers and Beurre Noisette
Prep/Cook time: 6 hours marinading time and 2-3 hours cooking and prep time.
Serves: 4 - 6
Lunch Leftovers:As is
Tips and Tricks: This is a little complicated this recipe but it is meant to be well worth it!
Sunday: Lime and Sweet Chilli Fish Parcels
Prep/Cook time: 30mins
Serves: 4
