Monday:  Pesto Zucchini Noodles with Roasted Chicken
Prep/Cook time: 30mins
Serves: 3- 4
Lunch Leftovers: For lunch you could add a range of different ingredients to mix this one up!
Tips and Tricks: For Meatless Monday, just leave out the chicken.

Tuesday: Chicken Asparagus and Artichoke Skewers
Prep/Cook time: Marinade the chicken over night.  Cook/Prep time 45mins
Serves: 4

Wednesday: Crispy Skinned Salmon with Mint Quinoa
Prep/Cook time: 45mins
Serves: 5
Lunch Leftovers: Shred the salmon over a green leafy salad.

Thursday: Quinoa Nasi Goreng
Prep/Cook time: 30mins

Saturday: Spiced Lamb Chops with Warm Chickpea, Capsicum Salad
Prep/Cook time: 30mins
Serves: 6 
Lunch Leftovers:As is 

Sunday: Pulled Pork Tacos
Prep/Cook time: 10-12 hours of slow cooking the pork. 45 mins on the night.
Serves: 6
Lunch Leftovers: As is
