This week, I have put together the following recipes to help use the abundance of berries and fresh veggies that summer brings.  For us, we have delicious fresh lettuce and herbs in the garden and an array of berries that can make for a delicious healthy sweet treat at the drop of a hat. Tips and tricks: The recipe refers to a pressure cooker but I think that you can roast in the oven or on the stovetop.
